Introduction

These cookies are low fat and made with whole wheat flour. AND they are delicious! My husband does not really like pumpkin and does not always care for "healthy" food, but he loves them!

Ingredients



    * *Whole Wheat Flour, 4 cup
    * Pumpkin, canned, without salt, 15oz
    * Cinnamon, ground, 1.5 tbsp
    * *Pumpkin Pie spice, 1.5 tsp
    * Granulated Sugar, 2/3cup
    * Brown Sugar, 1 cup, unpacked
    * Egg, fresh, 2 extra large
    * Applesauce, unsweetened, 1 cup
    * Baking Soda, 2 tsp
    * Salt, 1 tsp
    * Vanilla Extract, 2 tsp

Directions

Mix together dry ingredients, then add the next wet ingredients. Mix until blended. Spoon onto cookie sheet and bake at 350 degrees for 10-12 minutes.
Makes 59 cookies.
