Introduction

Ingredients
-
2lbs. 93 percent lean ground beef
3 large carrots, sliced
1 tbsp. white flour (use wheat or rice if you like)
1 tsp. salt
1tsp. black pepper
3/4 cup of water
1 box of instant garlic mashed potatoes (These will likely require milk and butter. I use 2 percent milk and blue bonnet reduced fat margerine. Also, I find that store brand garlic potatoes work just as well for this.)
1 egg
2 cups of shredded cheddar cheese (use low fat to reduce calories even more)
Directions
-brown ground beef.
- drain any fat.
-add 3/4 cup of water, salt, pepper, flour, and 3 sliced carrots.
-let simmer while you prepare potatoes.
-prepare potatoes according to instructions on box.
-lightly grease cake pan or glass bakeware.
-pour ground beef mixture into the botom of the pan. Try to make it even.
-Add mashed potatoes on top of beef mixture. Spread evenly.
-crack and scramble egg.
-pour egg over mashed potatoes. Try to make sure entire top is covered.
-Bake at 375 degrees for 20 minutes.
-remove pan from oven
-sprinkle cheese over the potatoes.
- bake an additional 10 minutes or just until cheese is melted and bubbly.
Seving size reflects on a 3" X 2 1/2" piece. I normally cut 4 ows with 3 pieces in each.
