Introduction

a quick high-protein lunch.

you can find Tofurky and Vegenaise at most health food stores. they even sell Tofurky slices at Trader Joe's now.

Ingredients

    * 2 slices of Ezekial sprouted sesame seed bread. (or bread of your choice. i use Ezekial because it's higher protein)
    * 5 slices of Tofurky Peppered Deli Slices. (the peppered is my favorite, but feel free to try other flavors!)
    * 1 tomato, sliced
    * 1 handful of spinach
    * 1 tablespoon of Vegenaise

Directions

Lightly toast the bread.
Spread the Vegenaise on one slice.
Add Tofurky slices, sliced tomato, and spinach.

Enjoy!
