Ingredients

    Olive Oil - Basil Infused, 2 tbsp
    Red Ripe Tomatoes, 3 medium whole
    Onions, raw, 1 medium
    Peppers, sweet, red, raw, sliced, half cup
    Green Peppers (bell peppers), half cup, strips
    2 Chicken Thighs, 2 Chicken Drumsticks, 2 Chicken Wings (remove skin from thighs and drumsticks)
    Cinnamon, ground, 1 tbsp
    Salt, 1.5 tsp
    Pepper to taste
    Sugar, 1.5 tsp
    Garlic, 2.5 tsp

Directions

To make this recipe go further, cut the thighs and wings in half.

Heat oil in a pan. Brown onions, add tomato and all spices. Sautee until tomato has turned to gravy. Add water where necessary to keep gravy from sticking to pan. Add chicken, peppers, and garlic. Stir and leave to simmer until chicken is cooked. Check often to keep gravy from sticking to pan. Add water if it starts to get dry. Serves 4. Have with rice or pasta.
