10oz yellow rice
2 tbs olive oil
1 bell pepper chopped
1 onion chopped
1 lb chicken breast
2 c shredded mexican cheese blend, divided
1tsp chili powder
Directions
Cook rice according to package directions.
Heat oil on med-hi heat. Add onion and bell pepper; cook for 5 min. Add chicken and chili powder. Add 1 cup of cheese. Cook until chicken is cooked thru. Turn off heat. Stir in yellow rice. Sprinkle remaining cheese over mixture; cover until cheese melts. Serves 6
