Introduction

I make these for my son's (high school) lunch. Because rice paper sticks like glue when wet I place each roll in a romaine leaf to make packing up easier. Number of Servings: 4

Ingredients

    4 rice paper wraps
    1 can of tuna, drained
    1 tbsp of grainy mustard
    1 tbsp of olive oil
    Juice of half a lemon
    1 green onion, sliced
    One-quarter cup of cilantro leaves
    1 dill pickle, cut into long skinny quarters
    Salt and pepper

Directions

Pour some water into a shallow dish. Add rice paper wraps and soak for about 2 minutes, until they become translucent and soften. Lay on a kitchen towel and blot to dry.

Toss tuna together with mustard, oil, lemon juice, green onion, cilantro and salt and pepper.

Place a rice paper wrap on a counter top and lay a piece of dill pickle along the edge closest to you. Add one quarter of the tuna salad on top of the pickle and give 1 complete roll. Fold in ends and continue to roll up. Repeat for each wrap.
