Introduction

Ingredients

1.5 cups milk
.5 cups heavy cream
4 tbsp butter
4 ounces diced mushrooms
1/4 cup chopped onions
1/4 cup chopped green peppers
1 tbsp minced garlic
1/4 cup flour
1 cup chicken broth
3 large egg yolks
2 1/2 cups cooked, diced chicken
1 can baby peas
Your favorite seasonings (I used Montreal Steak, Si Si Cilantro and Lemon pepper)
Directions
1. Melt the butter in a large skillet
2. Add the mushrooms, onions and green peppers. Cook until veggies are soft and the mushrooms give off their liquid- about 5 minutes.
3. Add the garlic and cook, stirring, until fragrant- about 30 seconds.
4. Add the flour and stir constantly for 2 minutes.
5. Add the milk and the cream and stir until thoroughly incorporated.
6. Add the chicken broth.
7. Return to a boil, stirring constantly until the sauce thickens- about 3 minutes.
8. Add your favorite seasonings at this time.
9. Remove from heat.
10. Whisk the egg yolk in a medium size bowl until pale yellow and frothy.
11. Add about 1/2 cup of the hot sause to egg yolk whisking constantly (you are tempering the yolks so they wont scramble on you when you add them to the rest of the hot sause)
12. Slowly add the egg yolk mixture to the remaining sauce, stirring until well blended.
13. Return to heat..
14. Add the chicken and peas and cook for an additional 5 minutes.
