Introduction

Ingredients

    4 cloves garlic
    2 onion, chopped
    4 tbs olive oil
    4 butternut squash, halved and roasted
    1 bunch cilantro, about 1 cup finely chopped
    1 tbs Italian seasoning
    4 cup water
    3 tbs curry
    salt & pepper to taste

Directions

pre heat oven to 350. half butternut squash, remove seeds rub with a small amount of olive oil, salt and pepper. place cut side down on cookie sheet cook 30 min.
heat oil in large pan
saute onion, garlic, and cilantro, till onion translucent
meanwhile mash half the squash (remove from shell of course)
cut the other half into 1 inch cubes or so. as above remove flesh from shell!
add the mashed squash to saute mix add 4 cups water, Italian seasoning, curry powder, salt and pepper to taste. bring to boil, reduce heat cover and simmer for 1 hour, stirring occasionally. add chunks of squash continue to cook, 30 min. serve over rice.
