Ingredients

    2T butter
    2c steel cut oatmeal (also called Irish Oatmeal
    6c water
    1c milk
    1/2c buttermilk

Directions

Toast oats in butter over medium heat until they smell "toasty."

Cover with boiling water. Allow to simmer 20-25 minutes, until most of the liquid is absorbed.

Add milk and buttermilk (mixing the two together first to prevent curdling of the buttermilk). Stir milks in, and allow to simmer another 10-15 minutes, until oatmeal is the consistency you want.

Serve with extra buttermilk, brown sugar, cinnamon, or anything else!

    Made mine with plain ole water, but I just LOVE LOVE LOVE toasting them in the butter. What an incredible smell! Will certainly try with buttermilk soon. - 12/18/09

    I have been challenged trying to cook steel cut oats in the microwave, but finally found a small mixing bowl that will not boil it over. I have learned to avoid butter, milk and sugar. I use a banana and blueberries to sweeten it and cinnamon for zest. - 3/15/13

    Very Good
    I love steel cut oats. I tried the recipe above, and compared it to following basic cooking directions. (Basic boiling water and oats) with brown sugar/cinnamon. I can scarcely tell any difference. It's back to basic and less calories for me --tho this was very good. - 10/26/10

    Incredible!
    This was a little time-consuming to make due to the cook time of the oats, but boy was it delicious! I actually ate 2 servings (2 c.) and added 1/2 a medium banana and one Tbs. of organic chunky peanut butter. Yummy! - 3/9/10
