Ingredients

    1/2 cup, pitted, chopped Dates
    1/2 cup (not packed) Raisins, (or chopped dried apricots)
    1/2 cup, pitted, chopped Prunes
    1 cup water
    1/2 cup unsalted Butter
    3 Egg whites
    1/4 tsp Salt
    1 tsp Baking Soda
    1 cup Whole Wheat Flour
    1 tsp Vanilla or Rum Extract
    1/2 tsp ground Cinnamon
    1/4 tsp ground Nutmeg
    1/2 cup chopped Walnuts

Directions

Boil all of the fruits and water for 5 minutes. Add the butter and set aside to cool. Add the remaining ingredients and stir well. Bake 20-30 minutes at 350 degrees F in greased loaf pan. (Can also add coconut, dried papaya, dried pineapple, dried cherries, dried cranberries - be sure to adjust the calorie content.)
