Ingredients

    1-2 chicken breasts - raw, cut into bite sized pieces
    2 tsp extra virgin olive oil
    1 tsp lemon pepper
    1 jar (14 oz) roasted red peppers, blended to a creamy consistency
    1 cup heavy whipping cream
    1/4-1/2 cup parmesian
    1 tsp cajun seasoning
    1 box mini penne pasta
    1/2 green onions, sliced thin, raw

Directions

In a large stock pot fill with water to boil pasta--add pasta once boiling. In the meantime, in sauce pan, heat olive oil over medium heat. Place chicken into pan and sprinkle with lemon pepper. When chicken is cooked through add roasted red peppers. Simmer, uncovered, for 5 minutes. Stir in heavy whipping cream and cajun seasoning, simmer another 10 minutes. Add 1/4 cup parmesian and stir until melted. Drain pasta and return to pot. Pour in sauce and mix well. Add green onions and stir well. Allow to sit for 10 minutes before serving (this will allow the sauce to thicken and enhance the flavors). Sprinkle with any remaining cheese and serve.
