Ingredients

    Peel 2 medium-size eggplant

    Slice about 3/4 inch thick

    Place on paper towels and salt

    Turn and salt other side

    Dip in egg and bread crumbs

    Saute in olive oil until slightly tender (may need to add more oil)

    Spread a small amount of spaghetti sauce in the bottom of a baking dish

    Lay eggplant in bottom of dish

    Cover with spaghetti sauce

    Lay slices of smoked mozerella on top

    Cover with Parmesan cheese

Directions

Bake at 350 for 25 minutes, covered with foil

Remove foil and bake for 5 minutes uncovered till lightly brown on top
