Ingredients

    Beat together:
    1 c. egg substitute or egg whites
    3/4 c. granulated sugar
    1 29 oz. can pureed pumpkin


    Stir in:
    2 c. whole wheat flour
    2 tsp. cinnamon
    1 tsp. baking powder
    1 tsp. salt
    1 tsp. baking soda
    1 c. chocolate chips


    Spoon into 24 cupcake cups (either lined with paper cups or sprayed with cooking spray.) Bake at 350 degrees for 25 minutes, or until a knife inserted in the center of the cupcakes comes out clean.
