Ingredients

1 Bulb garlic , 1/4 in cut off top
3pds potatoes, rinsed
6 slices uncooked turkey bacon
4C reduced sodium chicken broth
1 1/2 Tbsp thyme, fresh chopped
1/2 tsp salt
1/4 tsp black pepper
6Tbsp reduced fat sour cream
6Tbsp low fat shredded chedder cheese
6Tbsp scallions, sliced
Directions
Preheat oven to 400 degrees. Wrap entire garlic bulb tightly in foil; place garlic and potatoes in oven.
Bake garlic until soft when squeezed about 45 min; remove from oven and let cool. Continue baking potates until tender when pierced about 15 min more. let potates cool enough to handle.
Meanwhile cook bacon in large nonstick skillet over med high heat until brownede, about 6 min. place bacon on paper towels to drain; chop bacon
Unwrap garlic and squeese pulp from bulb with hands into a large saucepan. Peel potatoes and add to saucepan; mashe with potato masher until smooth. Gradually stir in broth, thyme, salt and pepper until blended; place saucepan over medium heat adn cook until hot, stirring occasionally, about 5 to 10 min.
Spoo about 1 1/3 cups of soup into each bow adn top with sour cream, bacon scallions and cheese.
