    2 boxes Uncle Ben's (Original Long Grain & Wild Rice)
    8 cooked Chicken Breast, no skin chopped
    1 16oz can artichokes hearts, drained and chopped,
    2 cup diced Celery
    2 cup chopped Sweet red peppers (bell)
    1 pkg Good Seasonings Italian dressing (with olive oil and vinegar and omit the water)
    1 cup Kraft Mayo Light Mayonnaise (Mayo)


Cook rice according to the packaging using 1 cup less water. Combine chicken and mayo to the cooked rice and let cool. Mix in the remaining ingredients. Make 20 3/4cup servings
