Ingredients

    Mango salsa recipe for four servings: NI is for one serving with the Rancheros
    1 small mango cubed
    1T lime juice
    2/3 cup canned roma tomatoes
    3T red onion minced
    1 Serrano chili minced
    1/2 cup chopped cilantro
    dash of salt.

    Huevos Rancheros:
    1 corn tortilla
    1/3 cup egg whites
    2 thin slices avocado
    1/4 cup fat free refried beans
    heart of one sm/medium artichoke cubed
    cilantro as garnish

Directions

Mango Salsa: Combine all ingredients and let sit for flavors to merge for at least 20 minutes

Huevos: In a cast iron pan, with a little oil spray, heat the tortilla on one side. Flip over and spread the beans onto half the tortilla and the artichoke heart on the other. When heated through, carefully roll up and in the free space in the pan, cook the eggwhites.

Slide onto a plate. Top with avocado slices and salsa.
