Introduction

Ingredients

Two 14 oz. cans of whole tomatoes, including juice
4 Roma tomatoes, roughly chopped
12-15 Basil leaves, either torn or julienned
6 Cloves of garlic, sliced thinly
2 cups of Whole Wheat Spaghetti (2 cups cooked)
1 Boneless, skinless chicken breast
1 cup of low sodium chicken stock
1 Tbsp. Extra Virgin Olive Oil
Approx. 1 Tbsp. each salt and pepper, more or less to taste
Directions
Heat a saute pan with 1 Tbsp. of extra virgin olive oil over medium heat.
Slice chicken any way you want it - cubes, strips, etc. Saute in olive oil until cooked through, approx. 5 - 10 minutes, depending on the size of the chicken pieces (smaller cooks faster!). Set aside.
Spray a medium-sized pot with Pam and set heat to medium. Saute garlic 8-10 minutes, spraying extra pam if necessary. This can be done while the chicken is cooking to save time!
Add Roma tomatoes to pot and saute 6-8 minutes, stirring with garlic.
Add the canned tomatoes, chicken stock and chicken and simmer for 10-15 minutes. Salt and pepper to taste.
Add the basil and simmer for about 5 more minutes. No big deal if it simmers longer, just be sure to add the basil last.
Serve over Whole Wheat Spaghetti.
