Introduction

Number of Servings: 16

Ingredients

    4 tsp. peanut oil (or canola oil)
    16 oz. bag coleslaw mix
    12 oz. bag brocoli slaw mix
    2 Tbs. low sodium soy sauce
    1 1/2 tsp. red pepper flakes (or to taste)
    1/4 tsp. ground ginger
    1 tsp. dark sesame oil
    1 tsp sugar (or splenda)
    16 egg roll wrappers 6" to 7" each
    cooking spray

Directions

Heat peanut or canola oil in very large skillet.
Add the coleslaw and brocoli slaw and cook stirring frequently until softened, about 4 minutes. If the mixture seems too dry, add a little water. Add the soy sauce, red pepper flakes, sesame oil, ginger and sugar. Cook over medium heat until flavors are blended about 3 minutes more.

Preheat oven to 350 degrees and spray baking sheet with cooking spray.

Lightly moisten edges of eggroll wrapper with water. Place 1/4 cup filling in center. Fold in the sides then roll up completely to enclose filling. See note at bottom of recipe. Place the roll seem side down on baking sheet. Repeat procedure to make 16 egg rolls. Lightly spray the rolls with non stick cooking spray. Sprinkle with a ltiile salt if desired. Bake the rolls until lightly golden 20 to 25 minutes.

Notes: Usually on the package of egg roll wrappers, they have a picture and instructions on how to roll up egg rolls.
These freeze well and reheat great!
Serve with your favorite dipping sauce.
