Ingredients
-
2C all-purpose enriched, bleached flour
1C butter
1t vanilla extract
1C walnuts, chopped
1/2C powdered sugar (4T for dough, remaining sugar for after baking)
food coloring (optional)
Directions
Preheat oven to 350F. In a medium sized bowl, cream butter and 4 T of powdered sugar together using electric mixer. Add salt and vanilla (and a few drops of food coloring to achieve desired color, if you would like). Mix briefly then add flour 1/2 C at a time at medium speed until smooth. Scrape dough off of beaters and add to bowl. Mix in nuts gently with wooden spoon. Roll dough into balls 1" - 1 1/2" in diameter (the same sized or slightly large than a quarter), handling dough as little as possible. Place on non-stick baking sheet and bake 10-15 minutes, until just barely PALE golden brown. Roll or dust in powdered sugar and let cool on counter.
Store with waxed paper or paper towel between layers in a tupperware container. This way the powdered sugar doesn't fall off and they don't break from bumping together too much.
Yields approximately 42 balls. Serving information is listed for 3 cookies.
