Ingredients

Garlic, 2 cloves
Spinach, fresh, 65.2 grams
Onions, raw, 85 grams
Bell Pepper (Red), 85 gram(s)
Broccoli, fresh, 65.2 grams
Canadian Bacon, 5 slices
reduced-fat sharp cheddar cheese, .5 cup
Reduced Fat Mild Cheddar Fancy Shredded Cheese, 56 gram(s)
4 Eggs
Milk, 2%, 1.25 cup

Directions
Chop all veggies - I prefer to chop finely, but it's up to you.
Heat 1 T. extra virgin olive oil in pan
Sautee garlic and onions for about a minute
Add spinach and red pepper, sautee and additional minute
Add broccoli and Canadian bacon, sautee an additional couple minutes
Spread veggie mixture in a pie pan or casserole dish sprayed with non-stick spray.
Beat together eggs, milk, salt, pepper, and both cheeses.
Pour egg mixture over veggies.
Bake at 350 for approximately 40 minutes. Top should be golden brown and the egg mixture should be set.
Makes 4 fairly large servings.
