Introduction

Ingredients

    1 can of chick peas, drained
    1/2 cup cilantro chopped
    1/4 cup onion minced
    1 clove garlic minced
    1/2 tsp salt
    2 tsp cumin
    1/4 tsp baking soda
    1 T flour
    2 tsp olive oil

Directions

Makes three large patties.
Preheat oven to 400 degrees

In a food processor pulse chick peas, onion, garlic, cilantro, cumin, salt and soda. Transfer into a bowl and stir in flour.

Let rest for 10 minutes.

In a cast iron pan, heat 2 tsp olive oil. Form chickpea mixture into 3 patties and cook a couple of minutes on each side.

Then slide pan into a 400 degree oven and bake for 10-15 more minutes, until fairly golden and crispy looking on the outside.

serve with pita and tahini dressing, lettuce, tomato and sliced red onion.

    Incredible!
    That was really good. It cooked more like a pancake, even though the mix was pretty thick. I guess that's how heat affects chickpeas. I'm interested in seeing how different it is with dried chickpeas. - 7/22/11
