Introduction

These really are SO good. A favorite of anyone that comes over. I make it often for a large group. Crock pots are the best! These really are SO good. A favorite of anyone that comes over. I make it often for a large group. Crock pots are the best!

Ingredients

    - 1 pork roast (I actually use the boneless Hormel lean pork tenderloin, 2.25 pounds for 8 4 ounce servings)
    - 2 cans diced green chilies
    - Juice of 2 limes
    - 1 head of garlic, skins removed and cloves crushed (I just use the crushed garlic in a jar)
    - 1 cup chicken stock or broth
    - 1 small yellow onion diced (I have to use onion powder cuz DH don't do onions)
    - 1 tbs chopped fresh cilantro
    - 2 tbs cumin
    - 1 tsp cayenne pepper
    - 1 tbs salt
    - 1 tbs chili powder blend
    - 1 tsp cinnamon

Directions

Combine spices and rub over pork (I include onion powder here)

combine rest of ingredients in the bottom of the crock pot

Add pork

cook on low for 8-12 hours or high for 4-6 hours, or until pork is fork tender (easily pulled apart with a fork)

Remove pork from crockpot and shred in a large bowl

ladle juices from the crock pot into the bowl, mixing with the pork, until the pork is really moist but not too soupy (you want these to go on tortillas, so you don't want them dripping too much). be sure to get plenty of green chilis (and onion if you used a real onion) when adding the juice.

discard the rest of the juice

return the pork to crock pot, hold in crock pot until ready to serve

serve in corn or flour tortillas with sour cream, salsa, monterray jack cheese, etc.

4 ounces of pork is good for about two soft taco tortillas. I use reduced fat whole wheat tortillas, light sour cream, 2% grated cheese, and salsa.
