Introduction

This is a delicious restaurant quality basmati rice. So good. It's worth stopping at an ethnic food store to find black cardamom but you can substitute green cardamom if need be. Please note some of the spices are not included in the calorie breakdown as they don't contribute any calories.

Number of Servings: 4

Ingredients

    1 cup white basmati rice (uncooked)
    1 1/2 cup water
    1 Tbs neutral flavored oil (corn, canola)
    2 Tbs butter
    1 tsp salt
    1 tsp cumin seed
    1 black cardamom pod
    1 stick cinnamon

Directions

Rinse rice in cool water several times to remove excess starch. Soak rice in cool water for 30 minutes. Drain.

To a small saucepan with a tight fitting lid add the rice, 1 1/2 cup water and all remaining ingredients. Cover and heat over VERY LOW heat about 20 minutes or until all the water has been absorbed. Fluff and let sit about 5 minutes before eating. (Discard cardamom pod and cinnamon stick).

Makes 4 servings, 1 scant cup each.
