Ingredients

Diced chicken breast
1 scallion, chopped
I garlic clove, chopped
0.5 tsp ginger root, minced
garam masala
1 tomato
tomato paste, a squirt, mixed with 1 cup water
long grain brown rice
Directions
Put one cup of rinsed brown rice in 2 cups of water, bring to the boil then simmer for 20-25 minutes or according to instructions, until fluffy.
While this is cooking, heat up oil in a skillet and add scallion, garlic and ginger. Fry for 1-2 minutes. Add spice and heat through for a further minute. Add diced chicken and seal. Add chopped tomato and cook until you have a bubbling layer of the juice in the bottom of the pan. Add diluted tomato paste, reduce heat and simmer until the sauce has reduced and the chicken is cooked through.
Serve over rice. Nice with a little plain yogurt, chopped fresh cilantro and mango chutney.
