1 tsp cumin
1 tsp coriander
1 tsp very hot water
3/4 tbsp grated lime peel
salt and pepper
4 salmon fillets, 3/4" thick about 6 oz, skin removed
3 tbsp chopped fresh cilantro
lime wedges
preheat grill pan or outdoor grill for covered direct grilling over medium heat
in cup, stir together honey, cumin, coriander, water, lime peel, 3/4 tsp salt and 1/4 tsp pepper until blended. rub honey mixture over fillets. (I refrig for 4 + hours covered).
Place salmon fillets, skin side up on hot grill pan or rack and cook 4 minutes. With wide metal spatula, carefully turn salmon over;cook until just opaque throughout, 4 to 5 min. longer. Sprinkle salmon with cilantro and serve with lime wedges.
