Introduction
This is my interpretation (bastardized version) of Migas - a traditional Spanish egg and tortilla dish. This is usually eaten as breakfast, but I eat it morning, noon, and night!You can really do a lot with this recipe, as per your tastes. Salsa, beans, cheese, cilantro, jalapenos, and chorizo are all good to go. I keep mine pretty basic, but spicy.
It may not look that good, but trust me it's addicting. Technically, it is a vegetarian dish in that it contains no meat. As a former vegan, this was one of the things I missed the most.

Ingredients

3 jumbo eggs
1/4 cup milk
4 corn tortillas
4 flour tortillas
Tomato sauce
Hot sauce (I prefer El Yucateco in the green bottle and Cholula)
Salt and pepper to taste
Directions
Cut or tear up tortillas into chip-sized pieces. (about 8 pieces per tortilla)
Place on cookie sheet and bake in the oven at 350 for 10-15 minutes until light brown and crispy. (Or pan fry if you aren't concerned with added fat and calories.)
In a small mixing bowl, beat together eggs, milk, salt and pepper. Set aside.
Transfer tortilla chips into frying pan.
Slowly pour egg mixture over chips. Using a spatula, coat chips with egg mixture.
Scramble egg and tortillas together over medium to high heat.
Once scrambled, add tomato sauce, hot sauce, salt and pepper and heat through.
Serve with flour tortillas.
