Ingredients

    1/4 cup honey mustard
    1 cup nonfat sour cream
    1 cup dry-mashed potato mix, garlic flavor
    3 tbsp nonfat parmesan cheese
    1 tsp garlic powder
    1 tsp onion powder
    1 tsp. paprika
    1/2 tsp pepper
    1/2 cup egg substitute
    1 tbsp skim milk
    1 lb low fat chicken tenders

Directions

Combine honey mustard and sour cream in a small dish: mix until blended. Cover with plastic wrap and refrigerate until ready to serve. Preheat oven to 475 degrees. Line baking sheet with foil and spray with cooking spray. Combine potatoe mix, parmesan cheese, garlic powder, onion powder, paprika, and pepper in a shallow dish; mix well. Combine egg substitute and milk in medium bowl and mix with fork until frothy. Dip chicken in egg mixture, dredge in potatoe mixture until well coated. Place chicken tenders in a single layer on baking sheet, spray lightly with cooking spray. Bake 3-4 minutes, turn chicken over, spray top with cooking spray and bake 2-3 minutes until golden brown, crispy and cooked through. Serve with honey-mustard sauce.
