Introduction

Number of Servings: 8

Ingredients

    3/4 lbs cooked chicken breast pieces
    1 medium-small onion
    1 TB garlic
    1 Bay Leaf
    1 Can of the following:
    Chicken Broth (reduced sodium)
    Water
    Corn (no salt added)
    Black Beans
    Chickpeas

    Optional Garnishes:
    Cheddar Cheese
    Sour Cream
    Toasted Wheat Tortilla

Directions

Simmer: Chicken Broth, Water, Chopped Onion, Chopped Garlic, and Bay Leaf for 30 minutes with lid on.

Remove leaf add everything else (whole cans do not drain) and cook 10 minutes. Add in Fresh chopped Cilantro last.

Serve with chedder, sour cream, and toasted tortillas. (optional)

makes about 8 - 1 cup servings.
