Introduction

Number of Servings: 8

Ingredients

    500 grams Chicken breast without skin
    2 cups of chopped tomato
    1tsp ground ginger and garlic
    1/4 tsp of cinnamon
    Salt and Pepper to tast
    1l4 cup chopped Bell Pepper (>/< to taste)
    1/4 cup frozen/fresh corn (>/< to taste)
    2 cups of brown rice
    1 tsp of olive oil
    1 tsp of ground cumin

Directions

1. cut the chicken into bite size or smaller pieces and add ground black pepper and salt
2. In a skillet cooking a medium heat put in the olive oil and braise the ginger and garlic for a few minutes, then add the chicken with half of cumin and cinnamon cover, reduce heat a little. Add a little water if chicken is sticking to skillet . Let cook for 5-7 mins
3. Put chopped tomatoes in blender and add to chicken
4 Add remaining spices and ingredients and let simmer for another 5 mins
5. Transfer the chicken into a rice cooker
6. Add the brown rice and the recommended amount of water (usually one rice to two water)
Salt to taste and turn on rice cooker . when it turns itself off, the dish will be ready

7. Serve warm with a green salad or cucumber in yoghurt.
