Ingredients

    2# bag great northern beans, dried (1/4 c. dry = 3/4 c. cooked)
    1 # ham, cubed, 5% fat free
    8 T. onion, dried minced
    2 bay leaves, dried
    3 T. Pepper, ground
    4 T. Ham soup seasoning (Orrington Farms), dry
    1/4 to 1/2 t. baking soda
    1/2 c. celery, diced
    3/4 c. carrots, julienned or diced
    Water

Directions

Makes 16 1 cup servings.

Rinse and sort beans according to package instructions. Don't precook the beans.
In a 7.5 qt. crockpot (which actually hold 16 c.), add all ingredients with enough water to come to within 1/2 to 3/4" of top of crockpot. Stir, cover, and cook overnight on low.
In morning, discard any fat on top. Remove bay leaves.
If you prefer a thicker soup, mash some of the beans up until desired consistency of soup is achieved.
Stir and adjust water and seasonings.

Serve hot with cornbread muffins for a down-home meal.

NOTE: Baking soda removes the "toot" from beans. If necessary, start with 1/4 t. If needed, add up to 1/4 t. more (a total of 1/2 t.); more will cause it to taste soapy.

NOTE: Extras freeze well. Into each container, place the amount needed for one meal for your family or for individual(s).

VARIATION: Add 1/2 c. green peppers.

NOTE: For a vegan meal, omit ham and ham seasoning; use whatever seasonings you prefer.
