Ingredients

    11/2 cups of cooked chopped broccoli (frozen)
    2 cups cooked white rice
    2 larege eggs
    egg substitutes equal too 2 eggs
    4 oz low fat shredded cheddar cheese
    2.5 oz sliced mushrooms drained

Directions

Preheat oven for 375. Spray a 9 in. pie plate with butter flavored cooking spray. In large mixing bowl add rice, 2 oz of cheese and 1 egg mix together pour into greased pie plate slightly bring up the sides. in another mixing bowl combine broccoli, mushrooms and remaining eggs. spread mixture in crust. bake for 15 to 2o minutes. Then sprinkle remaining cheese over top and cook for another 10 minutes. Cool and cut into 6 slices and enjoy!!
