Ingredients

    1 lb salmon fillets, cut into medium sized pieces
    1 lb shrimp, shelled and deveined
    1 tbsp olive oil
    1 tsbp garlic paste
    1 tsbp lemon grass paste
    1 tbsp ginger paste
    1 tbsp cilantro paste
    1 tbsp Sriracha Hot Chili Sauce
    1 small onion, chopped finely
    4 cups fish stock
    2 cups water
    3/4 cup light soy sauce
    1/2 cup Thai fish sauce
    2 tbsp sugar
    1 cup uncooked brown rice
    3 (13.5 fl oz) cans of lite coconut milk
    Spring onions, finely chopped for garnishing

Directions

Heat the oil in a large saucepan. Fry the onion. Add garlic paste, ginger paste, cilantro paste, lemon grass paste, and chilli paste. Add uncoooked brown rice and stir to incorporate ingredients. Add the fish stock and water, bring to the boil. Cover and reduce to a simmer and cook for 45 minutes. Add the soy sauce, Thai fish sauce, and sugar. Then add the salmon and shrimp and poach until cooked. Add the coconut milk and simmer for two minutes. To finish, check the seasoning and add the chopped scallions.
