Introduction

Easy and quick omelet, good for lunch or breakfast. Can vary the vegetables if desired. Easy and quick omelet, good for lunch or breakfast. Can vary the vegetables if desired.

Ingredients


    2 large egg Eggs
    1/4 cup Cauliflower chopped very fine
    1/4 cup Broccoli, chopped very fine
    1 tbsp Onions
    1/4 cup Cheddar or Colby Cheese, Low Fat

Directions

Slightly steam vegetables until slightly tender. Beat eggs well until well blended. Pour into nonstick skillet over medium low heat. Lifting edges slightly to let uncooked egg run underneath; when nearly cooked, add slightly steamed vegetables on half, sprinkle with cheese and fold over. Take off heat and serve.
