Introduction

Protein and fiber packed soup that is easy to prepare with what you have on hand. Protein and fiber packed soup that is easy to prepare with what you have on hand.
Number of Servings: 6

Ingredients

    2 cups water
    1 cup broth
    1 cup medium salsa
    1 lb. sirloin tips (stew beef)
    1 can pinto beans
    1 1/2 cup quick barley
    2 cups cubed cooked sweet potatoes

Directions

Put all the ingredients in a crock pot and set it on High for 3-4 hours. Makes about 6 servings.
Feel free to substitute regular potatoes for sweet potatoes, black beans for pinto, canned tomato for salsa, etc. You can also add any kind of veggie to this soup to increase fiber and portion size (or feed more people). Remember, I just used what I happened to have on hand.
