Ingredients

    2 cloves garlic, minced
    1/2 t. salt
    1/2 t. ground black pepper
    2 t. ground cumin
    2. t. ground coriander
    1/2 t. ground fennel
    1/2 t. ground cinnamon
    6 boneless, skinless chicken thighs
    1 medium onion, diced
    1 c. coconut milk
    1 c. water
    1 T. lemon juice
    1/4 c. scallions

Directions

In a small bowl, mix the spices and rub over the chicken thighs. Place the chicken, onions, coconut milk, water, and lemon juice in the crockpot. Cover and cook onlow for 6-8 hours or high for 3-4 hours. Garnish with the scallions.

    Really good flavour! I used star anise instead of ground fennel, and it was delicious. I also added broccoli, but I think it would have worked better with sweet potato or aubergine. My partner wolfed it down, all round brilliant recipe! - 3/16/11

    this recipe is wonderful! My husband and I both love it. We added some chili paste to it in order to spice it up a bit, and it worked wonderfully! It is made at least every other week in our household! :) - 11/7/08

    ABSOLUTELY wonderful! I didn't do in the crock pot- because I left for work at 5 am, and by 4 pm this would have been over cooked. I rubbed the spices into the chicken in the am and let it marinate all day. Cooked on stovetop-addded 1 tomato and cilantro-whole family LOVED it! THANKS 4 great recipe - 2/26/08
