Ingredients

    2 tbsp olive oil
    1 c. chopped onion
    3 tsp chopped garlic
    .5 c diced green chilis (1 small can)
    2 tbsp oregano
    2 tbsp cumin
    2 lb ground lean turkey
    3 cans butter or cannellini beans (any light colored bean), approx. 6 cups
    2 regular sized cans of chicken broth (approx. 4 cups)
    .5 c corn starch
    chopped cilantro (garnish)

Directions

In a large soup pot, brown onion, garlic and chilis in olive oli on high heat. Mix in oregano and cumin. Add 1 lb turkey and cook thoroughly (approx. 5-10 mins). Add beans, broth, salt (to taste) and pepper. Bring to a boil. Reduce heat to low. In a separate bowl, mix warm broth into cornstarch and stir until thoroughly mixed and not lumpy. Add to chili and stir. Cover with a lid and simmer for 30 mins, stirring occasionally. Serve in individual bowls and garnish with chopped fresh cilantro.
