Ingredients


    Egg, fresh, 3 large
    Granulated Sugar, 2 cup
    Motts Natural Apple Sauce, 0.5 cup
    Canola Oil, 0.5 cup
    Salt, 1 tsp
    Cinnamon, ground, 3 tsp
    Vanilla Extract, 1 tsp
    Baking Powder, 0.25 tsp
    Baking Soda, 1 tsp
    Zucchini, 3 cup, grated
    Flour, white, 3 cup

    Simply mix all the ingredients together and bake in a preheated 325 degree oven.

    I make these into mini-muffins with a mini muffin pan, but you can use a regular muffin tin or even bake it into a zucchini bread loaf. You may have to adjust the time accordingly.

    For 48 mini muffins bake for 15 - 20 minutes!
    My picky-eater children adore these muffins and I have yet to meet a child or adult who doesn't like them!

Makes 48 mini-muffins or 18-24 regular sized muffins.
