Ingredients

Non-Stick Spray
5 Large Eggs
2 Egg Whites
0.25 Cup Skim (Fat Free) Milk
0.5 Cup Fat Free Shredded Mozzarella Cheese
1.5 Cups of Frozen Spinach
Dash of Salt and Pepper
Directions
Preheat oven to 375 Fahrenheit.
Spray muffin tin with non-stick spray and set aside.
Defrost and drain spinach in the microwave (if frozen it will take about two minutes).
In a large mixing bowl, beat eggs and egg whites along with skim milk.
Stir in mozzarella cheese and spinnach.
Add dash of salt and pepper (to season).
Pour mixture into the muffin tin to make 10 frittatas.
Bake in oven for 15 minutes or until golden.
Release frittatas from tin with plastic spatchula and cool on cooling rack.
Once cool, wrap individually in plastic wrap and freeze.
When you're ready to eat, pop one in the microwave for about 1:00 minute.
Makes 10 mini frittatas.
