Introduction

A really flavorful way to get your veggies! Do not use tomatoes packed in oil, as the calories are way higher. I like to roast my own tomatoes in the oven in big batches and freeze for later use. It's a good way to perfume your house on a lazy Sunday, and way cheaper. Also, use Marsala Cooking wine. You can find it in the vinegar aisle at the supermarket. Ingredients

    8 cups or so fresh green beans, ends trimmed
    8 oz. package sliced mushrooms
    1 and 1/2 cups roasted tomatoes OR 1 and 1/2 cups sundried soaked in warm water for 20 minutes
    3 oz. marsala cooking wine
    Sprinkle Italian Seasoning
    salt and pepper

Directions

Spray Pam on a heated cast iron or other pan
Cook mushrooms until they get a little color, stirring occasionally, about 5 minutes.
Add 2 oz. marsala wine to deglaze.
Lightly salt and pepper.
Remove from pan into dish.
Add green beans and lightly salt and pepper.
Add a sprinkle of italian seasoning or other herbs (dried)
Add 1 oz. marsala and 1/8 cup of water.
Cover and let steam about 10 minutes, stirring occasionally.
Add tomatoes and mushrooms. Stir.
Lower heat and cover to blend flavors for a couple of minutes.
Test for seasonings and enjoy!
