Ingredients

    1-3/4 c. organic wheat pastry flour
    1/4 c. wheat bran
    1/2 c. sugar
    1 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    1 cup mashed overripe banana (appx 3)
    1/3 c. unsweetened applesauce
    1 large egg
    2 large egg whites


    1/4 c. wheat bran

Directions

Preheat oven to 350 degrees.
Grease or spray loaf pan
Combine dry ingredients in large bowl
Mix banana, applesauce egg and egg whites in medium bowl with a fork or mixer
Combine both mixtures with a spoon until all dry ingredients are blended in.
Pour in loaf pan, check at 45 min. If it's a throw away pan, which is not as wide it will take an hour.
Done when golden brown and a toothpick will come clean out of the center when tested.
Makes one (1) 2 pound loaf which can be cut into 16, 2 oz serving. Very easy to slice once cooled.
