Introduction

Quick and easy Banana Cookie recipe. Easily adaptable and virtually allergen free as long as there's some type of nut you can eat. Gluten free if you buy gluten free oats. Can be made without the sugar, as it's optional. Great recipe for kids to do. I used it for my allergen free, kids cooking class! It went over great and the kids loved the cookies! Ingredients

    3 md Bananas; mashed
    1/3 c Oil (any kind ~ I used coconut oil)
    1 ts Vanilla
    1tsp Cinnamon (optional)
    1/4 Cup Sugar (optional)
    2 c Oats, rolled old-fashioned, uncooked
    1 1/4 c Nuts (any kind); chopped
    1/4 c Raisins

Directions

Combine mashed bananas, oil, cinnamon, sugar, & vanilla. Stir in oats, nuts and raisins. Drop by tablespoons onto greased cookie sheet. Press down lightly with fork. Preheat oven to 350 F. Bake 12-15 (or more) minutes until golden brown.
