Ingredients

Polenta (can used tube or boxed. (8 1/2" slices from tube or 2 cups box mixed prepared according to directions)
1 can black beans, drained and rinsed.
1 13 oz. can 98% fat free chicken breast
McCormick Chili Seasoning (or your own Chili seasonings)
2 tbsn Flax Meal
1 tbsn Flax Oil
1 tbsn Try Me Tiger Sauce
Optional: Sour Cream, Guacamole, chopped onions and/or Salsa for topping.
Directions
Preheat oven to 350. Spray cast iron skillet with olive oil or canola oil cooking spray. Fill pan with one layer of polenta.
Drain and Rince 1 can black beans. Put beans in food processor with 1 pkg McCormick Chili seasoning (or your own chili seasonings), 2 tbsn flax meal, 1 tbsp flax oil. Puree. Pour on top of polenta. Add 1 13 oz. can chicken breast with 1 tbsn Tiger Sauce to blender, puree, pour on top of bean layer in skillet. Top with shredded Kraft Mexican blend shredded cheese. Bank in oven for approx. 30 minutes. May serve with low fat sour cream, salsa and/or guacamole topping.
