Introduction
My boyfriend makes these muffins for winter sports snacks. He never measures anything. He pretty much throws in what ever is around, dried fruit, nuts, chocolate chips.Since I occasionally eat them, I kind of paid attention as he was making them last night, so this is my best guess of what's in them. Ingredients

2 Bananas
.5-.75 cups soy milk
2 cups flour
1 tsp baking soda
.5 cup mini chocolate ships
.5-.75 cups nuts
.5-.75 cups chopped dried fruit
Directions
His way: Mash bananas, dump various ingredients into the bowl until you like the consistency. Bake at 325-350 until you think they're done.
I would recommend the following steps.
1. mash bananas, add .5 cup soy milk
2. stir together about 1.5 c flour and 1 tsp baking soda
3. add flour to banana and soy milk
4. add other ingredients
5. add additional .25 c soy milk or .5 cup flour until consistency seems about right.
6. Pour into greased muffin pan
Bake at 350 for 25-40 minutes. I intervened and took them out before they were golden brown last night. I think that is best. They should be brown around the sides and mostly firm, but a little bouncy when touched on the top. Left them cool in pan, so they'll cook a bit more and be easy to get out.
