Introduction

Ingredients

BBQ chicken.
Mixed vegetables, frozen, 4 cups.
Peas, frozen, 1 cup.
Water, 3 cups.
Dutch Curry & Rice soup 1-cup pkt, 3 sachets.
Directions
1. Remove skin from chicken and discard.
2. Remove all chicken meat from bones and shred into bite sized pieces.
3. Add to deep pan with all vegetables.
4. Add 1 cup water to pan and put on mod-high heat to begin heating through.
5. Mix soup sachets into remaining water, stir until dissolved, add to pan. Lower heat to mod. Simmer until vegetables are cooked through. If needed, add a small amount of water to keep moist.
6. Serve with steamed rice (rice not calculated in nutritional info).
*A great alternative is replacing chicken with lean beef mince (brown mince before adding vegies), served on toast.
*Add your choice of vegetables, ie. corn, beans, onion etc.
