Introduction

Ingredients

    1 1/2 cups Lowfat Buttermilk
    2 large Eggs
    3/4 tsp Vanilla Extract
    2 tbsp Canola Oil
    1 tsp Baking Powder
    1/2 tsp Baking Soda
    2 tbsp Sugar
    3/4 tsp Salt
    1 1/2 cups Dry Oatmeal
    1/2 cup Spelt Flour
    Nuts or Chocolate chips, optional
    (Add about a 1/4 cup of wheat flour if it looks too thin in the end.)

Directions

Preheat your griddle to 350. Mix all of the dry ingredients (flour, oatmeal, baking powder, baking soda, salt and sugar) in one bowl. Mix all wet ingredients (buttermilk, eggs, oil and vanilla) in another bowl. Dump the wet ingredients into the dry and stir. However, it is crucial you do not overstir the mixture. Then, using 1/3 cup scoops, put the pancakes on the griddle. Flip after about 2 minutes. Take off after another 2 minutes and serve. Enjoy!
