This is a pretty simple, and quick recipe, that is loaded with colour and flavour! The original recipe calls for 1 tbsp butter, but I used olive oil instead. Ingredients

    1 yellow onion (about 1 cup), chopped
    1 rib celery, chopped
    1 carrot, chopped (about 1 cup)
    1 tbsp olive oil
    1 butternut squash, peeled, seeds removed, chopped
    1 tart green apple, peeled, cored, chopped
    (squash & apple should be 3 to 1 ration)
    3 cups chicken broth (or vegetable broth if vegetarian)
    pinches of nutmeg, cinnamon, salt & pepper

Directions

Combine oil, onion, celery, and carrot in large saucepan. Cook for 5 minutes. Add squash, apple and broth. Bring to a boil. Simmer for 10 minutes or until squash is soft. Puree. Add spices to taste.
Serves 4-6
