Introduction

An easy, tasty, filling, and healthy dinner. One of my favorites! An easy, tasty, filling, and healthy dinner. One of my favorites!
Number of Servings: 15

Ingredients

    1 onion, chopped
    1 (15 oz) can black beans, rinsed and drained
    1 (15 oz) can red beans, rinsed and drained
    1 (15 oz) can corn, drained
    1 (8 oz) can tomato sauce
    2 (14.5 oz) cans diced tomatoes with chilies
    1 packet taco seasoning
    2 boneless skinless chicken breasts (fresh or frozen is fine)

Directions

Stir all ingredients (except chicken) together in a crock pot. Lay chicken on top. Cover and cook on low for six-ish hours (depending on your slow cooker). Before serving remove chicken, shred, and stir into stew. This is good plain or with toppings of your choice: sour cream, shredded cheese, tortilla chips, guacamole, (I like a big scoop of cottage cheese!)

*It's a little too spicy for us when I make it this way so I substitute one of the cans of tomatoes with chilies with a can of plain diced tomatoes. Still yummy.
