Ingredients

    1 cup cottage cheese, nonfat
    1 tbsp scallions, raw
    1 1/4 cup green peppers, chopped
    1 1/2 tbsp creamy cucumber salad dressing
    1 dash black pepper

Directions

Finely chop the scallions and green pepper, mix with cottage cheese (nonfat is best, but 1% will work too) and other ingredients--note fresh ground pepper or cayenne pepper are a nice touch and give the salad some extra ZING!
Eat and enjoy!

    Exchange the creamy cucumber salad dressing for real cucumbers and then you are really set for a healthy snack that will keep in the fridge! - 7/20/09

    Why dressing? chopped cucumber is crunchier and I dn't use salad dressing except for vinegar/olive oil. - 7/20/09

    I've been making a version of this for years. I just mix in tomatoes (minus the seeds), and any crunchy veggies in the fridge. I can see the dressing working. If you aren't getting enough fat in your diet, that would be a way to get some in. I've never used it but might try it sometime. - 7/21/09

    How very versitile! Never thought of eating it this way! will eliminate the dressing and use the veggies instead. BTW, have others eaten FF cottage cheese w/splenda & cinnamon as a dessert? Yum! - 7/20/09
