    4 medium sweet potatoes
    6 tbsp hummus (I like using roasted red pepper hummus for this)
    1 cup tomato, chopped
    1 cup bell pepper, chopped


Preheat your oven to 375 degrees. Wash your sweet potatoes and stab holes in them using tongs. Wrap them in aluminum foil and place in the oven on medium rack. Bake for about an hour, then take them out. Make criss-cross cuts on top and scoop out filling until the potatoes' centers are hollowed. Place the filling in a bowl, then chop your tomato and bell peppers. Add the veggies and hummus to the bowl and mix until all ingredients are fully blended. Scoop the filling back into the potatoes, cover with the foil, and bake for about 15 more minutes. Remove from the oven, then serve. Make four medium potatoes.
