Ingredients

    1/4 cup extra-virgin olive oil
    1 clove garlic, pressed
    1 tsp salt
    2 15 ounce cans black beans, drained
    1 large cucumber, peeled and diced
    2 large oranges, peeled and diced

    (the original recipe calls for Juice of 1/2 lime that I didn't add to mine)

Directions

Combine the olive oil, lime juice, garlic, and salt in a large bowl. Mix

Add the beans, cucumber and oranges, toss gently so as not to break up the beans and serve.

    Incredible!
    I love this salad! I never expected the flavors to work well together, but it tastes amazing. I only use a few tablespoons of olive oil and I rinse the black beans. - 2/20/10
